Keys to Maintaining Pots: 1. Move the cooked food out of the wok as soon as it's finished cooking, as the acid in the food will eventually damage the outside protective oil layer. 2. Clean the wok as soon as possible and keep it dry. Apply a layer of oil if it hasn't been used for a long time. 3. A small amount of rust is expected and can be cleaned with a tiny bit of edible oil after each use. Keeping the pots in a dry location will also reduce rust.
